Use the SWH_IMAGE_TAG environment variable in docker compose files

to select the swh images to use, like:

image: softwareheritage/base:${SWH_IMAGE_TAG:-latest}

Also add example config files for the graph-replayer-remote-bytopic.yml
replayer config.
